- Cut squash into thirds and remove seeds. Place squash in three clean microwavable plastic bags.
- Twist neck of bag and fold under squash. Place bags evenly around edge of turntable and cook on High for 10 minutes or until squash is tender. Set aside.
- To make sauce, place onions, garlic and oil in a microwavable bowl, cover and cook on High for 2 minutes, stir, then cook for another 2 minutes.
- Stir in tomatoes, cover and cook for 4 minutes. Add tomato paste , oregano or marjoram, basil, sugar and black pepper to taste, cover and cook for 4 minutes, stir, then cook for further 4 minutes.
- Transfer to a warm serving bowl. Spoon over sauce, toss to combine and sprinkle with pine nuts.

- 1 kg tomatoes, peeled and roughly chopped
- 150 ml tomato paste
- 2 tablespoons chopped fresh oregano or marjoram
- 2 tablespoons shredded fresh basil
- 1 large vegetable spaghetti or spaghetti squash
- 2 tablespoons toasted pine nuts
- 2 onions, finely chopped
- 1 clove garlic, crushed
- 50 ml Cooking oil
- 1 teaspoon sugar
- Freshly ground black pepper
