VEAL CACCIATORE

15 minutes

Preparation Method :

  • Place eggplant (aubergine), garlic and French dressing in a bowl and mix to combine.
  • Place veal around edge of a microwavable casserole dish and place eggplant in the centre, cover and cook on High for 4 minutes.
  • Stir in sauce, cover and cook on Medium for 6 minutes, stir, then cook for another 5 minutes or until veal is cooked. Scatter with olives and serve Hot.

INGREDIENTS

  • 1 eggplant (aubergine), cut into cubes
  • 1 clove garlic, crushed
  • 75 ml French dressing
  • 4 thin slices veal steak or escalopes, cut into thin strips
  • 500 ml tomato pasta sauce
  • 9 green olives, sliced
