HERBED SAUSAGE CASSOULET

Preparation Method :

  • Place bacon, onions and garlic in a microwave browning casserole dish, cover and cook on High for 3 minutes, stir, then cook for 2 minutes longer.
  • Add sausage and marjoram or oregano to casserole, cover and cook on Medium for 4 minutes.
  • Stir in tomatoes, wine, stock and tomato paste (puree), cover and cook on High for 8 minutes.
  • Stir in beans and zucchini, cover and cook on Medium for 4 minutes. Sprinkle with parsley and serve immediately.

INGREDIENTS

  • 4 rashers bacon, cut into medium strips
  • 2 large onions, chopped
  • 2 cloves garlic, crushed
  • 350 grams smoked wurst sausage, cut into thick slices
  • 1 tablespoon chopped fresh marjoram or oregano
  • 450 grams tomatoes, undrained and mashed
  • 250 ml red wine
  • 150 ml chicken stock
  • 75 ml tomato paste
  • 400 grams haricot or navy beans, rinsed and drained
  • 1 large zucchini (courgette), sliced chopped fresh parsley
