OMELETTE WITH FRESH HERBES

This omelette with fresh herbes dish has parsley, basil and chervil. You will love this wonderful dish. It is good to your healthy lifestyle. You can make it at home in just 20 minutes. The herbes adds to the unique look of the food and good taste!
Serves :

Preparation Time :
10 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Brush a shallow 20 cm / 8 in diameter dish with melted butter or margarine.
  • Beat the eggs very thoroughly with all the remaining ingredients except the garnish.
  • Pour into the dish, cover with a plate and transfer to the microwave.
  • Cook on for 2 minutes. Uncover and stir the egg mixture gently with a wooden spoon or fork, bringing the partially set edges to the centre.
  • Cover as before and return to the microwave. Cook for 2 minutes.
  • Sprinkle the eggs with mixed chopped parsley, chervil and basil . A little fresh tarragon may also be added.
  • Uncover and continue to cook for 30 seconds or until the top is just set. Fold into three and slide out on to a warmed plate. Garnish and serve immediately.

INGREDIENTS

  • Melted butter or margarine
  • 3 eggs
  • 50 grams mixed chopped parsley, chervil and basil
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • 2 tablespoons cold water
  • Parsley or watercress, to garnish
