OMELETTE ARNOLD BENNETT

This dish will give you creaminess meal. Omelette Arnold has cold milk that adds to the spectacular taste of the eggs. You can cook it in just 10 minutes. It has smoked haddock that gives you a complete meal. You can make a wonderful meal with this amazing dish!

Preparation Method :

  • Place the fish in a shallow dish with the water. Cover with a plate and cook for 5 minutes. Allow to stand for 2 minutes.
  • Drain and flake up the flesh with a fork. Work in the creme fraiche and season to taste with pepper.
  • Brush a 20 cm / 8 in diameter shallow dish with melted butter or margarine.
  • Beat the eggs thoroughly with the milk and salt. Pour into the dish. Cover with a plate and cook for 3 minutes, moving the setting edges into the centre half-way through cooking.
  • Uncover and cook for a further 30 seconds. Spread with the fish and cream mixture and sprinkle with the cheese.
  • Cook, uncovered for 2 minutes until the omelette is hot and the cheese has melted.
  • Divide into two servings and serve straight away.

INGREDIENTS

  • 150 grams smoked haddock or cod fillet
  • 50 ml boiling water
  • 120 grams creme fraiche
  • Freshly ground black pepper
  • Melted butter or margarine, for brushing
  • 3 eggs
  • 50 ml cold milk
  • A pinch of salt
  • 50 grams coloured Cheddar cheese, grated
