- Heat the oil in a Dutch oven on Full for 2 minutes. Add the lamb, garlic, cardamom seeds and garam masala. Mix well.
- Arrange the meat mixture round the edge of the dish, leaving a small hollow in the centre.
- Cover with clingfilm (plastic wrap) and slit it to allow steam to escape.
- Cook on Full for 10 minutes. Uncover and mix in the rice, stock and salt. Cover as before and cook on Full for 15 minutes. Allow to stand for 5 minutes.
- Arrange the biryani on a warmed serving dish and garnish with chopped hard-boiled eggs, tomato wedges, coriander leaves and fried chopped onion.

- 250 grams easy-cook long-grain rice
- 5 cardamom pods, crush the seeds
- 2 tablespoons Cooking oil
- 500 grams trimmed neck of lamb fillet, cut into small cubes
- 2 garlic cloves, crushed
- 2 tablespoons garam masala
- 500 ml hot chicken stock
- Salt to taste
- 125 grams flaked almonds, toasted
