APRICOT JAM WITH ALMONDS

Makes :
1 kilogram

Preparation Time :
20 minutes

Cooking Time :
1 hour

Preparation Method :

  • Place the apricot in a 2.5 litres bowl with the measured water. Cook, uncovered, on Full for about 20 minutes or until the fruit is very tender.
  • Add the sugar and lemon juice with the blanched almonds. Return to the microwave and cook uncovered, on Full for 6 minutes, stirring 2 - 3 times, until the sugar dissolves.
  • Continue to cook, still uncovered, for 30 minutes or until setting point is reached.
  • Allow to cool to lukewarm, then transfer to pots.

INGREDIENTS

  • 5 tablespoons halved blanched almonds     
  • 250 grams dried apricots, soaked, Drained and quartered
  • 500 ml cold water
  • 1 kg granulated or preserving sugar
  • Juice of 1 large lemon, strained
