APRICOT JAM WITH ALMONDS

                    Preparation Method :
- Place the apricot in a 2.5 litres bowl with the measured water. Cook, uncovered, on Full for about 20 minutes or until the fruit is very tender.
 - Add the sugar and lemon juice with the blanched almonds. Return to the microwave and cook uncovered, on Full for 6 minutes, stirring 2 - 3 times, until the sugar dissolves.
 - Continue to cook, still uncovered, for 30 minutes or until setting point is reached.
 - Allow to cool to lukewarm, then transfer to pots.
 
INGREDIENTS
- 5 tablespoons halved blanched almonds
 - 250 grams dried apricots, soaked, Drained and quartered
 - 500 ml cold water
 - 1 kg granulated or preserving sugar
 - Juice of 1 large lemon, strained
