- Press the cut sides of the garlic halves against the sides of a deep 2.5 litres / 4½ pt / 11 cups glass or pottery dish. Alternatively, for a stronger taste, crush the garlic directly into the dish.
- Add both cheeses, the corn flour, wine and lemon juice. Cook, uncovered for about 7 minutes, stirring four times, until the fondue begins to bubble gently.
- Remove from the microwave and mix in the Kirsch. Season well to taste.
- Bring the dish to the table and eat by spearing a cube of bread on to a long fondue fork, swirling it round in the cheese mixture, then lifting it out.
INGREDIENTS
- 1 - 2 garlic cloves, peeled and halved
- 150 grams Emmental cheese, grated
- 500 grams Gruyere (Swiss) cheese, grated
- 1 tablespoon cornflour (cornstarch)
- 300 ml Mosel wine
- 1 teaspoon lemon juice
- 2 tablespoons Kirsch
- Salt and freshly ground black pepper
- Cubed French bread, for dipping
