Preparation Method :
- Prepare two rectangles of baking parchment, 40 x 35 cm / 16 X 14 in each. Place the onion and lemon or lime slices in the cavities of the fish with the bay leaves.
- Transfer to the parchment rectangles and sprinkle with the herbs and salt. Wrap each trout individually, then put both parcels together in a shallow dish.
- Cook for 15 minutes, turning the dish once. Allow to stand for 2 minutes. Transfer each to a warmed plate and open out the parcels at the table.

- 2 large cleaned trout, 500 grams each, washed but heads left on
- 1 onion, thickly sliced
- 1 small lemon or lime, thickly sliced
- 2 large dried bay leaves, coarsely crumbled
- ½ teaspoon herbs
- 1 teaspoon salt
