SALMON RING WITH DILL

Preparation Method :
- Crumb the bread in a food processor. Lightly butter a deep dish and add all the remaining ingredients.
- Blend until the mixture is just combined and the fish coarsely minced.
- Spread smoothly into the prepared dish and push a straight-sided egg cup into the centre to form a ring.
- Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 15 minutes, turning the dish twice.
- Allow to stand until cool, then re-cover and chill. Cut into wedges and serve.

- 150 grams slices loose-textured white bread
- 1 kg skinned fresh salmon fillet, cubed
- 2 teaspoons bottled anchovy sauce
- 1 teaspoon salt
- 1 garlic clove, crushed
- 4 large eggs, beaten
- 2 tablespoons fresh dill
- White pepper
