SALMON MOUSSE

Preparation Method :
- Stir the gelatine into the cold water and allow to stand for 5 minutes to soften. Melt, uncovered, on Defrost for about 2 minutes. Stir again and mix in the remaining water.
- Tip the contents of the can of salmon into a large bowl and flake with a fork, remove skin and bones, then mash fairly finely.
- Mix in the melted gelatine, the mayonnaise, mustard, Worcestershire sauce, chutney and lemon juice. Cover and chill until just beginning to thicken and set round the edges.
- Beat the egg whites to stiff peaks. Beat one-third into the setting salmon mixture with the salt. Fold in the remaining egg whites and transfer the mixture to a ring mould, rinsed with cold water.
- Cover with clingfilm (plastic wrap) and chill for 5 - 7 hours until firm. Before serving, quickly dip the mould up to its rim in and out of cold water to loosen.
- Invert the Mousse on to a large wetted serving dish.
- Garnish attractively with plenty of cress, cucumber slices, salad greens and lime slices.

- 2 tablespoons powdered gelatine
- 150 ml cold water
- 420 grams red salmon
- 150 ml creamy mayonnaise
- 1 tablespoon mild homemade mustard
- 2 teaspoons Worcestershire sauce
- 2 tablespoons fruit chutney,chopped if necessary
- Juice of ½ large lemon
- 2 large egg whites
- A pinch of salt
- Cress, cucumber slices, salad greens and slices of fresh lime, to garnish
