SALMON MAYONNAISE FLAKE

- Divide the salmon into four portions. Arrange round the edge of a deep 25 cm / 10 in diameter dish. Sprinkle with salt and pepper and trickle a little melted butter or margarine over the top if wished.
- Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Defrost for 20 minutes. Allow to cool to lukewarm, then flake the fish with two forks.
- Transfer to a bowl, add half the almonds and the onion, parsley and tarragon. Gently stir in the mayonnaise until well mixed and moist.
- Line a long serving dish with lettuce leaves. Arrange a line of salmon mayonnaise on top. Sprinkle with the remaining almonds and garnish with fennel.

- 200 ml French-style mayonnaise
