MEDITERRANEAN-STYLE SALMON ROAST

- Wash the salmon, ensuring all scales are scraped off. Place in a deep 20 cm / 8 in diameter dish. Whisk together the remaining ingredients and spoon over the fish.
- Cover with a plate and leave to marinate in the refrigerator for 3 hours. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook for 15 - 20 minutes, turning the dish twice. Divide into portions to serve.

- 4 tablespoons Cooking oil
- 4 tablespoons lemon juice
- 3 tablespoons tomato puree (paste)
- 1 tablespoon chopped basil leaves

- 3 tablespoons chopped parsley
