- Season the fish with salt and pepper. Marinate in the lemon juice and Worcestershire sauce for at least 20 minutes.
- Melt the butter or margarine in a saucepan (skillet). Add the shallots and fry (sauté) gently until soft and semi-transparent. Add the ham and mushrooms and stir-fry for about 5 minutes.
- Blend the cornflour with the cold milk until smooth and add the remaining ingredients. Roll up the plaice fillets and spear with cocktail sticks (toothpicks).
- Arrange in a deep 20 cm / 8 in diameter dish. Coat with the mushroom mixture. Cover with cling film (plastic wrap) and slit it twice to allow steam to escape. Cook for about 10 - 12 minutes.

- 4 shallots, peeled and chopped

- 400 grams mushrooms, thinly sliced
- 2 tablespoons cornflour (cornstarch)
- 2 tablespoons cold milk
- 250 ml chicken stock
- 150 grams single (light) cream
- ½ teaspoon caster sugar
- ¼ teaspoon turmeric
- 2 teaspoons martini bianco
