PAELLA
The Paella is another healthy recipe that is usually offered by some sophisticated restaurants. This is made of natural ingredients such as olive oil, onions, garlic chopped onion, peas, mussels, prawns, and turmeric. Try this recipe and you will definitely like it.

- Arrange the chicken around the edge of a casserole dish, leaving a hole in the centre. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook for 10 - 15 minutes. Drain off the liquid and reserve. Cube the chicken. Wash and dry the dish.
- Pour the oil into the dish and heat for 1 minute. Stir in the onions, garlic and green pepper. Cook, uncovered, for 5 minutes.
- Add all the remaining ingredients with the chicken and reserved liquor, stirring in well. Cover as before and cook for 20 minutes, turning the dish three times.
- Allow to stand inside the oven for 10 minutes, then cook for a further 5 minutes. Uncover and garnish with mussels, prawns and lemon wedges.

- 1 kg boned chicken breast
- 2 tablespoons Cooking oil
- 2 onions, chopped
- 2 garlic cloves, crushed
- 1 green (bell) pepper, seeded and chopped
- 250 grams risotto rice
- 1 teaspoon saffron powder or turmeric
- 150 grams frozen peas
- 4 tomatoes, blanched and skinned
- 250 grams cooked mussels
- 75 grams cooked ham, cubed
- 150 grams peeled prawns
- 500 ml boiling water
- Salt to taste
- Extra cooked mussels, cooked prawns and lemon wedges for garnishing
