PAELLA WITH PIMIENTOS
The Paella with Pimiento is a traditional that is typically found in different countries. This dish offers a different taste and aroma which is created by the pimientos. Like other recipes, this is also a very eas-to-prepare dish which is perfect to serve every day.

Preparation Method :
- Arrange the chicken around the edge of a casserole dish, leaving a hole in the centre. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook for 10 - 15 minutes. Drain off the liquid and reserve. Cube the chicken. Wash and dry the dish.
- Pour the oil into the dish and heat for 1 minute. Stir in the onions, garlic and green pepper. Cook, uncovered, for 5 minutes.
- Add all the remaining ingredients with the chicken and reserved liquor, stirring in well. Cover as before and cook for 20 minutes, turning the dish three times.
- Allow to stand inside the oven for 10 minutes, then cook for a further 5 minutes. Uncover and garnish with peas, pimientos strips, prawns and lemon wedges.
INGREDIENTS
- 1 kg boned chicken breast
- 2 tablespoons Cooking oil
- 2 onions, chopped
- 2 garlic cloves, crushed
- 1 green (bell) pepper, seeded and chopped
- 250 grams risotto rice
- 1 teaspoon saffron powder or turmeric
- 200 grams drained canned pimientos, cut into strips
- 150 grams frozen peas
- 4 tomatoes, blanched and skinned
- 75 grams cooked ham, cubed
- 150 grams peeled prawns
- 500 ml boiling water
- Salt to taste
- Extra cooked mussels, cooked prawns and lemon wedges for garnishing
