WHOLE FISH WITH CHILI SAUCE

Preparation Method :

  • Wash fish under cold running water and pat dry with absorbent kitchen paper. Score both sides of fish three times.
  • Place fish on a round microwavable serving plate, sprinkle with rice wine, cover and cook on Medium for 8 - 10 minutes.
  • Place oil, chilies and garlic in a microwavable bowl, cover and cook on High for 2 minutes.
  • Add red pepper, green pepper, sugar, basil and fish sauce to chili mixture mix to combine, cover and cook for 4 minutes.
  • Stir well, then spoon he sauce over fish, garnish with basil leaves and serve hot.

INGREDIENTS

  • 750 grams firm-fleshed fish, such as snapper or bream, cleaned
  • 3 tablespoons shredded fresh basil
  • 3 tablespoons fish sauce
  • 5 tablespoons mirin or rice wine
  • 3 tablespoons peanut oil
  • 4 fresh red chilies, seeded and sliced
  • 2 cloves garlic, crushed
  • ½ red pepper, sliced
  • ½ green pepper, sliced
  • 1 teaspoon brown sugar
  • Whole basil leaves
