Preparation Method :
- Wash fish under cold running water and pat dry with absorbent kitchen paper. Score both sides of fish three times.
- Place fish on a round microwavable serving plate, sprinkle with rice wine, cover and cook on Medium for 8 - 10 minutes.
- Place oil, chilies and garlic in a microwavable bowl, cover and cook on High for 2 minutes.
- Add red pepper, green pepper, sugar, basil and fish sauce to chili mixture mix to combine, cover and cook for 4 minutes.
- Stir well, then spoon he sauce over fish, garnish with basil leaves and serve hot.
