- Place the butter or margarine in a 20 cm / 8 in diameter casserole dish (Dutch oven). Heat, uncovered for 2 minutes.
- Add the vegetables and wine. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 5 minutes. Allow to stand for 5 minutes.
- Add the fish to the vegetables. Blend the cornflour smoothly with the cream, then mix in the stock. Season with salt, pepper and the anchovy essence or Worcestershire sauce.
- Pour over the fish. Cover as before and cook for about 10 minutes. Mix in the dill, then beat together the cream and egg yolks and stir into the fish mixture.
- Cover as before and cook on Defrost for 3 - 5 minutes.

- 150 ml vegetable stock
- 2 tablespoons butter or margarine
- 1 onion, chopped
- 2 carrots, finely diced
- 6 celery stalks, thinly sliced
- 150 ml white wine
- 3 teaspoons cornflour
- ½ teaspoon anchovy essence (extract) or Worcestershire sauce
- 2 tablespoons chopped dill (dill weed)
- 300 ml whipping cream
- Salt and freshly ground black pepper
- 2 egg yolks
