Preparation Method :
- Place fish in a microwavable shallow dish, pour over boiling water, cover and cook on High for1 - 2 minutes. Drain off water.
- Pour milk over fish, cover and cook on Medium for 6 minutes. Drain off milk, remove skin and bones from fish and flake flesh.
- Place fish in a food processor, add capers, cream, lemon juice, mustard and black pepper to taste and process to make a pate.
- Stir in pistachio nuts and chives and spoon pate into a pate dish or serving bowl. Cover and chill until ready to serve.

- 250 grams smoked cod or haddock
- 500 ml boiling water
- 500 ml milk
- 1 tablespoon capers, drained
- 2 tablespoons double cream
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- Freshly ground black pepper
- 2 tablespoons coarsely chopped Pistachio nuts
- 1 tablespoon snipped fresh chives
