GINGERED SEA BASS WITH ONIONS

Preparation Method :
- Wash the fish inside and out. Dry with kitchen paper. Make three diagonal slashes with a sharp knife, about 2.5 cm / 1 in apart, on both sides of each fish.
- Place head-to-tail in a dish. Top and tail the onions, cut each into threads along its length and sprinkle over the fish.
- Thoroughly mix together the remaining ingredients and use to coat the fish. Cover the dish with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook for 10 minutes, turning the dish once.
- Transfer the fish to a serving plate and coat with the onions and juices from dish.

- 450 grams cleaned but heads left on
- 8 spring onions (scallions)
- 1 teaspoon salt
- ½ teaspoon sugar
- 1 in piece fresh root ginger, peeled and finely chopped
- 3 tablespoons soy sauce
