CARP IN JELLIED SAUCE

- Wash the carp, then soak in enough cold water with the vinegar added to remove the muddy taste.
- Place the carrots and onions in a deep dish with the boiling water and salt. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook for 20 minutes, turning the dish four times. Drain, reserving the liquid.
- Pour the liquid back into the dish. Add the carp in a single layer. Cover as before and cook for at least 10 minutes, turning the dish twice.
- Allow to stand for 5 minutes. Transfer the carp to a shallow dish, cover and chill. Transfer the liquid into a jug and chill until lightly jellied.
- Spoon the jelly over the fish and serve.

- 1 very fresh carp, cleaned and cut
- 3 carrots, thinly sliced
- 3 onions, thinly sliced
- 550 ml boiling water
- 2 teaspoons salt
