PESTO-DRESSED MACKEREL

Cooking Time :
4 minutes

Preparation Method :

  • Put the fish on a plate, flesh side up. Beat the tomato juice with the pesto and lemon peel and spoon over the fish.
  • Sprinkle with salt and pepper. Cover with clingfilm and slit it to allow steam to escape.
  • Cook on Defrost for 4 minutes or until the flesh flakes. Allow to stand for 1 minute before eating with boiled macaroni.

INGREDIENTS

  • 1 mackerel, cleaned, head removed and Rinsed
  • 1 tablespoon tomato juice
  • 1 teaspoon pesto
  • ½ teaspoon grated lemon peel
  • Salt and freshly ground black pepper
  • Macaroni, to serve
