Preparation Method :
- Put the fish on a plate, flesh side up. Beat the tomato juice with the pesto and lemon peel and spoon over the fish.
- Sprinkle with salt and pepper. Cover with clingfilm and slit it to allow steam to escape.
- Cook on Defrost for 4 minutes or until the flesh flakes. Allow to stand for 1 minute before eating with boiled macaroni.
INGREDIENTS
- 1 mackerel, cleaned, head removed and Rinsed
- 1 tablespoon tomato juice
- 1 teaspoon pesto
- ½ teaspoon grated lemon peel
- Salt and freshly ground black pepper
- Macaroni, to serve
