MACKEREL WITH RHUBARB AND RAISIN SAUCE

Preparation Method :

  • Place the rhubarb and water in a casserole dish (Dutch oven). Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for 5 minutes, turning the dish three times. Uncover and mash the rhubarb to a pulp. Stir in the raisins, sugar, vanilla essence and lemon zest, then set aside.
  • Fold each mackerel in half crossways from head to tail. Put the butter or margarine and lemon juice in a deep 20 cm / 8 in diameter dish.
  • Melt for about 2 minutes. Add the fish and coat with the melted ingredients. Sprinkle with salt and pepper.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Medium for 10 - 12 minutes or until the fish looks flaky.
  • Allow to stand for 5 minutes. Heat through the rhubarb sauce and serve with the mackerel.

INGREDIENTS

  • 400 grams young rhubarb, coarsely chopped
  • 4 tablespoons boiling water
  • 2 tablespoons raisins
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla essence (extract)
  • Finely grated zest and juice of ½ small lemon
  • 4 mackerel, cleaned, boned and heads discarded
  • 50 grams butter or margarine
  • Salt and freshly ground black pepper
