- Microwave the kippers. Remove the skin and bones and flake up the flesh.
- Transfer to a food processor with the remaining ingredients and process until the mixture forms a paste.
- Spoon into a small dish and level the top. Cover and chill until firm.
- Serve spread on to hot toast or savoury biscuits.

- 250 grams kipper fillets
- 75 grams cream cheese
- Juice of ½ lemon
- ½ teaspoon English or continental made mustard
- 1 garlic clove, thinly sliced (optional)
