- Trim the kipper, discarding the tail. Soak for about 3 hours in several changes of cold water to reduce saltiness, if wished, then drain.
- Place in a large, shallow dish with the water. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 5 minutes.
- Serve on a warmed plate with knob of butter or margarine
