HADDOCK AND VEGETABLES IN CIDER SAUCE

It is a delicious food as its main ingredient is the haddock or other kinds of white fish, mushrooms with vegetables. It is also cooked with margarine, cornflour, sweet cider, and added with some ingredients for flavour. Try to cook this for your family they will love it.

20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Place half the butter or margarine in a deep dish. Melt, uncovered, on Defrost for about 2 minutes.
  • Add the onion, carrots and mushrooms. Arrange the fish on top.
  • Adjust seasoning and pour the cider gently over the fish. Dot with the remaining butter or margarine.
  • Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 10 minutes.
  • In a glass jug, blend the cornflour smoothly with the cold water and gently strain in the fish liquor. Cook, uncovered until thickened, whisking every minute.
  • Pour over the fish and vegetables. Spoon on to warmed plates and eat straight away.

INGREDIENTS

  • 50 grams butter or margarine
  • 1 onion, thinly sliced and separated into rings
  • 3 carrots, thinly sliced
  • 50 grams button mushrooms, sliced
  • 4 pieces filleted and skinned haddock or other white fish
  • Salt to taste
  • 150 ml medium -sweet cider
  • 2 teaspoons cornflour  
  • 1 tablespoon cold water
