FISH FILLETS IN GRAPE JUS

Preparation Method :
- Place grapes in a food processor or blender and process to make a puree. Push puree through a seive. Discard seeds and skins.
- Place butter and spring onions in a shallow microwavable dish, cover and cook on High for 1 minute. Stir well.
- Place a fish fillet along each edge of dish and fold thinner parts under fillet to make an even thickness. Cover and cook for 2 minutes.
- Pour grape Jus over the fish, place carrot in centre of dish and season to taste with black pepper. Cover and cook on Medium for 3 - 5 minutes or until fish is cooked.

- 250 grams red or black grapes
- 2 tablespoons butter
- 2 spring onions, sliced
- 4 thin white fish fillets, whiting or flounder, skinned
- 1 carrot, cut into thin strips
- Freshly ground black pepper
