COLEY FILLETS WITH LEEK AND LEMON MARMALADE

Preparation Method :

Place the butter, garlic and leek in a deep dish. Cover with clingfilm and slit it twice to allow steam to escape.
Cook for about 2 minutes. Arrange the fillets on top and sprinkle with half the lemon juice and cook for further 5 minutes.
Transfer the fish to two warmed plates and keep hot. Mix the remaining lemon juice, marmalade and seasoning into the fish juices and leek.
Cover with a plate and cook for 2 minutes. Spoon over the fish and serve.

1 tablespoon butter
1 garlic clove, peeled and crushed
1 leek, slit and thinly sliced
2 coley fillets
150 grams, skinned
1 teaspoon lemon juice
2 teaspoons lemon marmalade
Salt and freshly ground black pepper
