NORMANDY COD WITH CIDER AND CALVADOS

- Place half the butter or margarine in a deep 20 cm / 8 in diameter dish. Melt, uncovered, for 1 minute. Mix in the onion, carrots and mushrooms.
- Arrange the fish in a single layer on top. Dust with the salt. Pour the cider into the dish and dot the steaks with the remaining butter or margarine.
- Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook for 8 - 10 minutes, turning the dish four times.
- Carefully pour off the cooking liquor and reserve.
- Mix the cornflour smoothly with the water and calvados. Add the fish juices. Cook, uncovered for 2 minutes until the sauce thickens, whisking every 20 - 30 seconds.
- Arrange the fish on a warmed serving plate and top with the vegetables. Coat with the sauce and garnish with parsley.
