CURRIED COD WITH COCONUT

Preparation Method :
- Put the cod on a plate and leave aside. Put the butter or margarine, curry powder, coconut and cream in a small bowl and beat well together.
- Heat, uncovered, on Defrost for 2 minutes. Spoon over the cod and sprinkle over salt and pepper to taste. Dust with paprika.
- Cover with plastic wrap and slit it to allow steam to escape. Cook on Full for 4 minutes.
- Allow to stand for 1 minute. Uncover and sprinkle with coriander.
INGREDIENTS
- 220 grams skinned cod fillet, cut from the thicker end
- 1 tablespoon butter or margarine, at kitchen temperature
- ½ teaspoon mild curry powder
- 1 tablespoon fine shredded coconut
- 1 tablespoon single cream
- Salt and freshly ground black pepper
- Paprika
- Chopped coriander leaves, to garnish
