Preparation Method :
- Put the butter, margarine or oil in a deep 20 cm / 8 in diameter dish and heat, uncovered, on Defrost for 1 minute. Mix in the chopped onion, cover with a plate and cook for 2 minutes.
- Stir in the peas, bean sprouts and mushrooms. Cover as before and cook for 2 minutes. Remove from the microwave and stir.
- Beat the eggs thoroughly with the salt, water and soy sauce. Pour evenly over the vegetables. Cook, uncovered for 5 minutes, turning twice.
- Allow to stand for 1 minute. Divide into two and transfer each to a warmed plate. Garnish with the spring onions and serve straight away.

- 2 tablespoons cooked peas
- 2 tablespoons cooked or canned bean sprouts
- 125 grams mushrooms, sliced
- 3 large eggs
- ½ teaspoon salt
- 2 tablespoons cold water
- 1 teaspoon soy sauce
- 4 spring onions (scallions), finely sliced
