FRENCH-STYLE DUCK

If you prefer cooking in the microwave, you can try to prepare for French-Style Duck that is simply a delectable and palatable dish. Cooking this dish would only last for about 45 minutes. While it’s still set on fire, also spend some time talking with your family!

Preparation Method :

  • Stand the duck upside-down on upturned tea plate standing in Dutch oven.
  • Scatter the prunes, celery and garlic around the duck. Cover the dish with clingfilm (plastic wrap) and slit it twice to allow steam escape.
  • Cook on Full for 20 minutes. Uncover and carefully pour off and reserve the fat and juices. Turn duck over.
  • Cover as before and cook on Full for 20 minutes. Cut into 4 portions, transfer to a serving dish and keep hot. Skim the fat from the cooking juices.
  • To make the sauce, place the cider in a measuring jug.
  • Whisk in the tomato puree, crème fraiche, the skimmed cooking juices and cornflour. Cook, uncovered, on Full for 5 minutes until thickened and bubbling whisking every minute.
  • Pour over the duck and prunes and accompany with tagliatelle.

INGREDIENTS

  • 2 kgs duck,washed and dried
  • 10 - 12 stoned (pitted) prunes
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, crushed

For the sauce

  • 300 ml dry cider
  • Salt to taste
  • 2 teaspoons tomato puree  
  • 2 tablespoons crème fraiche
  • 1 tablespoon corn flour  
  • Boiled tagliatelle (Ribbon Pasta), to serve
