DUCK WITH ORANGE SAUCE
                            Duck with Orange Sauce is such a delectable dish that you can give to your family! It has its sensuous appeal to anyone who would eat it. It contains a lot of ingredients including corn flour, lemon, redcurrant jelly, orange, orange liqueur and soy sauce!

                    Preparation Method :
- Stand the duck upside-down on an upturned tea plate standing in a 25 cm / 10 in diameter casserole dish.
 - Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 20 minutes. Uncover and carefully pour off the fat and juices.
 - Turn the duck over. Cover as before and cook on Full for 20 minutes. Cut into four portions, transfer to a serving dish and keep hot. Skim the fat from the cooking juices.
 - To make the sauce, place all the ingredients except the cornflour in a measuring jug. Add the skimmed cooking juices.
 - Make up to 1 cup with hot water. Mix the cornflour to a thin paste with a few spoonfuls of cold water.
 - Add to the jug and mix thoroughly. Cook, uncovered, on Full for 5 minutes, stirring 3 - 4 times. Pour over the duck and serve hot.

- 2 kgs duck, washed and dried
 
For the sauce
- 2 teaspoons cornflour
 - 2 tablespoons fine-shred lemon marmalade
 - 1 tablespoon redcurrant jelly
 - Finely grated peel of 1 large orange
 - Juice of 2 oranges
 - 2 tablespoons orange liqueur
 - 1 teaspoon soy sauce
