DUCK BALTI

Preparation Method :

  • Heat the oil in a Balti pan, wok or large frying pan over a medium to high heat. Add the onions, garlic and ginger and cook for about 5-10 minutes, until the onion is tinged brown.
  • Add the chilli and spice mix and cook for 2-3 minutes.
  • Add the duck and stir fry for about 5 minutes, until sealed on all sides. Add water and simmer, stirring often, for 15 minutes.
  • Add the orange zest and juice, tomatoes and tomato puree, fenugreek and garam masala. Simmer, stirring occasionally, for 30 minutes, until the duck is tender. Add more water if the mix becomes dry during cooking.
  • Sprinkle with coriander to serve.

INGREDIENTS

  • 1 kilo grams duck fillets, cut into cubes
  • 100 ml sesame oil
  • 4 onions, chopped
  • 4 cloves garlic, crushed
  • 2.5cm fresh root ginger, grated
  • 2 fresh green chilli, chopped
  • 3 teaspoon Balti spice mix
  • Orange juice of 1 orange
  • 2 small tomatoes, chopped
  • 30 ml tomato puree
  • 2 teaspoon dried fenugreek
  • 2 teaspoon Balti garam masala
  • Fresh coriander, chopped
