Preparation Method :
- Top and tail the aubergines and halve them lengthways.
- Arrange them on a large plate, cut sides down, and cover with kitchen paper. Cook on Full for 8 - 9 minutes or until soft.
- Scoop the flesh out of the skins directly into a food processor and add the remaining ingredients. Process to a smooth and creamy puree.
- Spoon into a serving bowl, cover and chill lightly before serving.

- 750 grams aubergines (eggplants)
- Juice of 1 lemon
- 4 tablespoons olive oil
- 1 - 2 garlic cloves, crushed
- 250 ml fromage frais or quark
- 1 tablespoon chopped mint leaves
- ¼ tablespoon caster (superfine) sugar
- 2 tablespoons salt
