MINTED AUBERGINE DIP

Minted Aubergine Dip can be the ultimate answer to your food cravings! No wonder many people prefer this food over anything else because it contains nutritious foods that can help promote body’s wellness. This can be the perfect dish you’ve finally been waiting for!

10 minutes

Preparation Method :

  • Top and tail the aubergines and halve them lengthways.
  • Arrange them on a large plate, cut sides down, and cover with kitchen paper. Cook on Full for 8 - 9 minutes or until soft.
  • Scoop the flesh out of the skins directly into a food processor and add the remaining ingredients. Process to a smooth and creamy puree.
  • Spoon into a serving bowl, cover and chill lightly before serving.

INGREDIENTS

  • 750 grams aubergines (eggplants) 
  • Juice of 1 lemon 
  • 4 tablespoons olive oil 
  • 1 - 2 garlic cloves, crushed 
  • 250 ml fromage frais or quark
  • 1 tablespoon chopped mint leaves 
  • ¼ tablespoon caster (superfine) sugar
  • 2 tablespoons salt
