LIME CURD

Makes :
3 Cups

Preparation Time :
15 minutes

Cooking Time :
9 minutes

Preparation Method :

  • Place butter and sugar in a large microwavable jug and heat on Medium for 1 minute, stir, then heat for 1 minute longer or until butter melts.
  • Continue cooking in this way for further 2 more minutes or until sugar dissolves.
  • Stir in lime rind and lime juice. Add egg yolks and cook for 1 minute, stir well, then cook for 1 minute longer.
  • Continue cooking in this way for 2 more minutes or until mixture thickens. Pour curd into hot sterilised jars. Seal when cold and store in the refrigerator.

INGREDIENTS

  • 100 grams unsalted butter, cubed
  • 250 grams castor sugar
  • Finely grated rind of 6 limes
  • 150 ml lime juice
  • 6 large egg yolks, beaten
