Preparation Method :
- Arrange the Swiss roll slices over the base and half-way up the side of a shallow glass bowl. Moisten with the sherry and few spoonfuls of the reserved syrup.
- Cover with the drained fruit. Add the custard powder and sugar in a deep dish and mix smoothly with a little of the cold milk. Blend in the remainder.
- Cook, uncovered, on Full for 8 - 10 minutes, whisking briskly every minute to keep the custard smooth. Allow to cool slightly, then pour over the trifle.
- Cover when cold and chill thoroughly. Before serving, decorate with the whipped cream, sprinkles and glace cherries.

- 500 grams peach slices or fruit cocktail, drained and syrup reserved
- 50 grams custard powder
- 2 tablespoons castor sugar
- 500 ml cold milk
- 1 jam -filled Swiss roll, thinly sliced
- 3 tablespoons sweet sherry
- 150 ml whipped cream
- Sprinkles and red glace cherries, halved
