SUET PUDDING WITH LEMON

Preparation Method :
- Thoroughly grease a 3 cups pudding basin. Pour in the lemon curd. Heat, uncovered, on Full for 20 - 30 seconds.
- Sift the flour into a bowl and toss in the suet and sugar. Mix to a soft consistency with the egg and milk. Spoon into the basin.
- Cook, uncovered, on Full for about 2 minutes or until the pudding is well risen and spongy- looking. Allow to stand for 2 minutes.
- Turn out on to a plate and eat with cream or custard.
INGREDIENTS
- 2 tablespoons lemon curd
- 50 grams self-raising flour
- 25 grams beef or vegetable suet
- 1 tablespoon castor sugar
- 1 large egg, at kitchen temperature, beaten
- 2 tablespoons cold milk
- Cream or custard, to serve
