SUET PUDDING WITH FRUIT

Cooking Time :
2 minutes

Preparation Method :

  • Thoroughly grease a 3 cups pudding basin. Pour in the syrup. Heat, uncovered, on Full for 20 - 30 seconds.
  • Sift the flour with ground mixed spice into a bowl and toss in the suet, mixed dried fruit and sugar. Mix to a soft consistency with the egg and milk. Spoon into the basin.
  • Cook, uncovered, on Full for about 2 minutes or until the pudding is well risen and spongy- looking. Allow to stand for 2 minutes.
  • Turn out on to a plate and eat with cream or custard.

INGREDIENTS

  • 2 tablespoons mixed dried fruit  
  • 2 tablespoons golden syrup
  • ½ teaspoon ground mixed spice
  • 50 grams self-raising  flour
  • 25 grams beef or vegetable suet
  • 1 tablespoon castor sugar
  • 1 large egg, at kitchen temperature, beaten
  • 2 tablespoons cold milk
  • Cream or custard, to serve
