MARMALADE SPONGE PUDDING

- Thoroughly grease a 3 cup pudding basin. Sift the flour into a bowl and toss in the sugar. Finely rub in the butter or margarine.
- Mix to a soft consistency with the egg, milk and vanilla essence. Put the marmalade in the prepared basin. Heat, uncovered, on Full for about 20 - 25 seconds.
- Spoon in the pudding mixture. Cook, uncovered, on Full for 2 minutes or until the pudding is well risen and spongy-looking.
- Allow to stand for 1 minute. Turn out on to a plate and eat with cream, ice cream or custard.

- 50 grams self-raising flour
- 2 tablespoons castor sugar
- 2 tablespoons butter or margarine
- 1 large egg, beaten
- 2 tablespoons cold milk
- ½ teaspoon vanilla essence
- 2 tablespoons marmalade
- Ice cream to serve
