GINGERBREAD PUDDING

Preparation Method :
- Sift flour, ginger and cinnamon together into a bowl. Stir in oatmeal and make a well in the centre.
- Place butter, golden syrup and sugar in a microwavable bowl or jug and heat on High for 1 minute, stir, then heat for 1 minute longer or until mixture is melted.
- Pour butter mixture and egg into well in centre of dry ingredients and mix to combine. Stir in milk.
- Pour mixture into a greased 6 cup microwavable kugelhopf mould and cook, elevated, on Medium for 8 minutes or until pudding is cooked.
- Cover and stand for 2 minutes. Remove cover and cool on a rack until firm around the edges. Turn out, sprinkle with icing sugar and serve warm.

- 100 grams self-raising flour
- 1 teaspoon ground ginger

- 250 grams coarse oatmeal
- 100 grams unsalted butter
- 150 ml golden syrup
- 150 grams brown sugar
- 1 egg, beaten
- 50 grams milk icing sugar, sifted
