Preparation Method :
- Thoroughly grease two 4 cups pudding basins.
- Sift the flour, cocoa and spice into a large bowl.Toss in the peel, breadcrumbs, sugar, fruit and suet.
- Beat together the eggs, treacle, Guinness and milk, In a separate bowl.
- Stir into the dry ingredients to a soft mixture. Divide equally between the prepared basins. Cover each loosely with kitchen paper.
- Cook, one at a time, on Full for 4 minutes. Allow to stand for 3 minutes inside the microwave. Cook each pudding on Full for a further 2 minutes.
- Turn out of the basins when cool. When cold, wrap with a double thickness of greaseproof paper and freeze until needed.
- Defrost completely and cut into portions and reheat individually on plates for 50 - 60 seconds, while serving.
INGREDIENTS
- 75 grams all-purpose flour
- 1 tablespoon cocoa powder
- 2 teaspoons mixed spice
- 1 teaspoon grated orange or tangerine peel
- 75 grams fresh brown breadcrumbs
- 1 tablespoon black treacle (molasses)
- 75 ml Guinness
- 1 tablespoon milk
- 150 grams dark soft brown sugar
- 500 grams mixed dried fruit cake mix with peel
- 150 grams shredded suet
- 2 large eggs
