CHRISTMAS PUDDING

Makes :
2 Puddings

Preparation Time :
30 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Thoroughly grease two 4 cups pudding basins.
  • Sift the flour, cocoa and spice into a large bowl.Toss in the peel, breadcrumbs, sugar, fruit and suet.
  • Beat together the eggs, treacle, Guinness and milk, In a separate bowl.
  • Stir into the dry ingredients to a soft mixture. Divide equally between the prepared basins. Cover each loosely with kitchen paper.
  • Cook, one at a time, on Full for 4 minutes. Allow to stand for 3 minutes inside the microwave. Cook each pudding on Full for a further 2 minutes.
  • Turn out of the basins when cool. When cold, wrap with a double thickness of greaseproof paper and freeze until needed.
  • Defrost completely and cut into portions and reheat individually on plates for 50 - 60 seconds, while serving.

INGREDIENTS

  • 75 grams all-purpose flour
  • 1 tablespoon cocoa  powder
  • 2 teaspoons mixed spice
  • 1 teaspoon grated orange or tangerine peel
  • 75 grams fresh brown breadcrumbs
  • 1 tablespoon black treacle (molasses)
  • 75 ml Guinness
  • 1 tablespoon milk
  • 150 grams dark soft brown sugar
  • 500 grams mixed dried fruit cake mix with peel
  • 150 grams shredded suet  
  • 2 large eggs
