ALMOST INSTANT CHRISTMAS PUDDING

Preparation Method :

  • Place the breadcrumbs into a bowl and sift in the flour and allspice. Thoroughly grease two 4 cups pudding basins.
  • Add the sugar, suet and dried fruit. Mix to a soft mixture with the eggs, fruit filling and treacle.
  • Divide between the prepared basins and cover each loosely with kitchen paper.
  • Cook, one at a time, on Full for 6 minutes. Allow to stand for 5 minutes inside the microwave. Cook each pudding on Full for further 4 minutes, turning the basin twice.
  • Turn out of the basins when cool. When cold, wrap in greaseproof paper and refrigerate.
  • Cut into portions and reheat for about 5 minutes. Serve with the blender cream or whipped cream.

INGREDIENTS

  • 250 grams fresh white breadcrumbs
  • 100 grams all-purpose flour
  • 2 teaspoons ground allspice
  • 150 grams dark soft brown sugar
  • 250 grams finely shredded suet  
  • 750 grams fruit cake mix
  • 3 eggs, thoroughly beaten
  • 450 grams cherry fruit filling
  • 2 tablespoons black treacle(molasses)
  • Whipped cream, to serve
