Preparation Method :
- Combine the rice pudding and custard in a 9 cups bowl. Put the gelatine into a small bowl and stir in half the water.
- Heat, uncovered, on Defrost for 2 minutes or until melted and the liquid is clear. Add the remaining water.
- Stir gently into the rice and custard mixture. Spoon the jam into the emptied small bowl.
- Warm, uncovered, on Defrost for 2 minutes. Stir into the rice mixture with the vanilla and almond essence.
- Cover and chill until just on the point of setting. Stir in the cherries. Fill with the rice mixture in a wetted mould.
- Cover and chill until firm and set. Turn out and serve with the fruit sauces.
INGREDIENTS
- 75 grams smooth apricot jam
- 1 teaspoon vanilla essence
- ½ teaspoon almond essence
- 500 grams rice pudding
- 500 grams custard
- 2 tablespoons powdered gelatine
- 100 ml cold water
- 2 tablespoons assorted coloured glace cherries, coarsely chopped
