IMPERIAL RICE

Preparation Method :

  • Combine the rice pudding and custard in a 9 cups bowl. Put the gelatine into a small bowl and stir in half the water.
  • Heat, uncovered, on Defrost for 2 minutes or until melted and the liquid is clear. Add the remaining water.
  • Stir gently into the rice and custard mixture. Spoon the jam into the emptied small bowl.
  • Warm, uncovered, on Defrost for 2 minutes. Stir into the rice mixture with the vanilla and almond essence.
  • Cover and chill until just on the point of setting. Stir in the cherries. Fill with the rice mixture in a wetted mould.
  • Cover and chill until firm and set. Turn out and serve with the fruit sauces.

INGREDIENTS

  • 75 grams smooth apricot jam
  • 1 teaspoon vanilla essence  
  • ½ teaspoon almond essence  
  • 500 grams rice pudding
  • 500 grams custard
  • 2 tablespoons powdered gelatine
  • 100 ml cold water
  • 2 tablespoons assorted coloured glace cherries, coarsely chopped
