The Victoria sandwich gateau can completely change your appetite. Preparation Method :
- Line the bases and sides of two shallow dishes with clingfilm , allowing it to hang very slightly over the edge.
- Sift the flour on to a plate. Cream together the butter or margarine and sugar until the mixture is light and fluffy and the consistency of whipped cream.
- Beat in the eggs one at a time, add 1 tablespoon flour with each. Fold in the remaining flour alternately with the milk using a large metal spoon.
- Spread equally into the prepared dishes. Cover loosely with kitchen paper. Cook one at a time on Full for 6 minutes. Allow to cool to lukewarm, then invert on to a wire rack.
- Peel away the clingfilm and leave until completely cold.
- Sandwich together with cream or Butter Cream Icing or jam, chocolate spread, peanut butter.
- Then add in the orange or lemon curd, orange marmalade, canned fruit filling, honey or almond paste.
- Coat the top and side with cream or Butter Cream Icing.
- Decorate with fresh or preserved fruits, nuts. Halve each baked layer to make total of four layers before filling.

- 3 tablespoons cold milk
- 3 tablespoons jam
- 150 ml double or whipping cream, whipped
- Icing sugar, sifted, for dusting
