WATERMELON AND APRICOT CHILL WITH FROSTED CRAPES

- Pour the wine and grape juice into a 6 cups bowl. Add half of the lime peel. Heat, uncovered, on Full for 4 - 6 minutes.
- Add the apricot strips. Cook, uncovered, on Full for 2 minutes. Stir in the vanilla and almond essence. Cover and allow to cool.
- Thoroughly chill when cold. Slice the watermelon flesh away from its skin and remove all the black seeds. Cut the flesh into small cubes. Set aside.
- Wash and dry the grapes. Dip them in egg white to cover, then coat thickly with caster sugar.
- Leave to dry and set for at least an hour. Add the melon to the apricot mixture and transfer to 4 - 6 glass dessert dishes.
- Top each with a bunch of frosted grapes and the remaining lime peel, cut into narrow strips.

- 150 grams dried apricots, well washed and cut into strips
- 1 teaspoon vanilla essence
- ½ teaspoon almond essence
- 1 large wedge red watermelon
- 4 clusters black seedless grapes
- 1 small egg white, lightly beaten
- Castor sugar
