MULLED PINEAPPLE

- Put the sugar and water in a 10 cup dish and stir well. Cover and cook on Full for 6 - 8 minutes to make a syrup.
- Peel and core the pineapple and remove the 'eyes'. Cut the slices into chunks. Add to the syrup with the remaining ingredients.
- Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape. Cook on Full for 12 minutes, turning the dish 3 - 4 times.
- Allow to stand for 5 minutes before spooning into dishes and eating with crisp, buttery biscuits.

- 250 grams castor sugar
- 150 ml cold water
- 1 large fresh pineapple
- 6 whole cloves
- 2 in piece cinnamon stick
- ¼ teaspoon grated nutmeg
- 3 tablespoons medium-dry sherry
- 1 tablespoon dark rum
- Biscuits, to serve
