Preparation Method :
- Puree the fruit in a blender or food processor. Sieve to remove the seeds. Pour the wine, juice or water into a mixing bowl.
- Add the sugar, vanilla and lemon strips. Cover with a plate and cook on Full for 4 minutes, stirring twice to ensure the sugar has dissolved.
- Add the berry puree. Cover as before and cook on Full for 2 minutes. Strain into a bowl. Blend the cornflour or potato flour smoothly with the water.
- Add to the fruit mixture. Cook, uncovered, on Full for 4 minutes, stirring three times or until thickened. Allow to cool slightly.
- Transfer to 4 dessert dishes, Cover and chill for several hours. Float yoghurt over the top of each before serving.

- 500 grams mixed soft berry fruits
- 50 ml red wine, apple juice or water
- 75 grams castor sugar
- 1 teaspoon vanilla essence
- Peel of 1 lemon, cut into strips
- 1 tablespoon corn flour
- 2 tablespoons cold water
- Homemade Yoghurt, to serve
