KISSEL

Preparation Method :

  • Puree the fruit in a blender or food processor. Sieve to remove the seeds. Pour the wine, juice or water into a mixing bowl.
  • Add the sugar, vanilla and lemon strips. Cover with a plate and cook on Full for 4 minutes, stirring twice to ensure the sugar has dissolved.
  • Add the berry puree. Cover as before and cook on Full for 2 minutes. Strain into a bowl. Blend the cornflour or potato flour smoothly with the water.
  • Add to the fruit mixture. Cook, uncovered, on Full for 4 minutes, stirring three times or until thickened. Allow to cool slightly.
  • Transfer to 4 dessert dishes, Cover and chill for several hours. Float yoghurt over the top of each before serving.

INGREDIENTS

  • 500 grams mixed soft berry fruits
  • 50 ml red wine, apple juice or water
  • 75 grams castor sugar
  • 1 teaspoon vanilla essence  
  • Peel of 1 lemon, cut into strips
  • 1 tablespoon corn flour
  • 2 tablespoons cold water
  • Homemade Yoghurt, to serve
