JELLIED CHERRIES IN PORT

Preparation Method :
- Stir in the cherry syrup with the gelatine in a jar and leave for 4 minutes to soften.
- Cover and melt on Defrost for 1- 1½ minutes. Mix in the remaining syrup, the sugar and cinnamon.
- Make up to 500 ml with port. Cover and heat on Full for 2 - 4 minutes, stirring , until the liquid is warm and the sugar has dissolved.
- Transfer to a 6 cups basin and allow to cool. Cover and chill until the jelly mixture is beginning to thicken and set slightly round the side of the basin.
- Fold in the cherries and divide between dessert dishes. Chill until completely set.
- Decorate with thick cream and a dusting of mixed spice before serving.
INGREDIENTS
- 1 tablespoon powdered gelatine
- 3 tablespoons caster sugar
- ½ teaspoon ground cinnamon
- Tawny port
- 750 grams canned stoned (pitted) morello cherries in light syrup, drained and syrup reserved
- Double (heavy) cream, whipped, and mixed spice, to decorate
