GRATINEE OF STONE FRUITS

Preparation Method :

  • Place fruit in an even layer in four individual round microwavable dishes.
  • Beat egg yolks, caster sugar and vanilla essence until light and creamy.
  • Combine cream and sour cream in a microwavable bowl and heat on High for 2 minutes. Using a balloon whisk, whisk warm cream mixture into egg yolk mixture.
  • Spoon over fruit, sprinkle with coffee crystal sugar and cook puddings, one at a time, on HIGH (100%) for 1 minute, then on MEDIUM (50%) for 1 minute or until topping is set like a custard.

INGREDIENTS

  • 500 grams apricots, cherries or plums, nectarines or peaches, sliced
  • 4 egg yolks
  • 50 grams castor sugar
  • ¼ teaspoon vanilla essence
  • 260 ml cream (single)
  • 2 tablespoons sour cream
  • 5 tablespoons coffee crystal sugar
