Preparation Method :
- Place fruit in an even layer in four individual round microwavable dishes.
- Beat egg yolks, caster sugar and vanilla essence until light and creamy.
- Combine cream and sour cream in a microwavable bowl and heat on High for 2 minutes. Using a balloon whisk, whisk warm cream mixture into egg yolk mixture.
- Spoon over fruit, sprinkle with coffee crystal sugar and cook puddings, one at a time, on HIGH (100%) for 1 minute, then on MEDIUM (50%) for 1 minute or until topping is set like a custard.

- 260 ml cream (single)
